Sarah Otter Seymour's Recipe .

 " I found this recipe on  B.B.C.Food. I think its a Hairy Bikers recipe"

                          

                    1lb              Mixed dried fruit         450gm      

                    6oz             Brown Sugar              170gm

                 1/2 pint          Black Tea (warm)      280ml                                                                                                                                        

                                      


                                      1 Large Egg.

                   1lb              Self Raising Flour      450gm

                                     2 Teaspoon Mixed Spice.

     Requires 2lb bread tin or equivalent.


  Soak the mixed dried fruit and the brown sugar, over night, in the  warm black tea (I used Sultanas, Currants and cranberries)

The next day , heat the oven to 170C/ 325F/ 3 (Ed Note. We assume this is a fan oven) and line a 2lb baking tin  or similar.

Mix 1 beaten Egg , the self-raising flour and 2 teaspoons of mixed spice into the soaked fruit mixture and mix well.

 Place mixture into the tin and bake for 1 1/2 hours (90 minutes) Test by using a skewer which should be clear when removed.

  Sprinkle some Caster Sugar on the top 10 minutes before the end of baking to give a nice crunchy top to the finished product.

Ed Note.   On removing from oven allow to stand in the tin for 10 minutes so as to set the product, do not leave too long as it will start to sweat and make the bottom and sides soggy. Don't be tempted to cut it until it is cold.
